When I say “salmon,” what’s the first thing that pops into your head? Healthy? Fancy? I don’t know how to cook that? All reasonable responses. And NOW what if I say “brown sugar glazed salmon?”
Hopefully the first thing that leapt to mind was “yum!” But if not (and if, in reality, it was more along the lines of “yikes”), then today is your lucky day, because I’m here to tell you that salmon, despite its somewhat high-brow reputation, is actually one of the quickest, easiest (and yes, healthiest) things you can make. Starting to sound a lot better, right?
And if that isn’t enough to convince you, I’ll let you in on a little secret- this recipe is how I learned to cook salmon. Yup, that’s right- back when I was a kitchen baby with basically no idea what I was doing, I still managed to make this salmon. So trust me, you can do this.
The second piece of great news is that like I said before, salmon is one of the quickest and easiest things in the world to prepare, which comes in especially handy if you’re a) trying to figure out a quick and healthy weeknight dinner, or b) trying to figure out a quick and easy (but also fancy) dinner to serve up to guests you want to impress. (Bonus points in both situations for serving it up with a side of mashed cauliflower with chives.)
Who knew one little fish could offer so much? It isn’t a superfood for nothing, friends.
The longest part of this recipe is marinating the salmon- about 15 minutes per side. But that’s it. Then you just cook it for 3 minutes a side or so (depending on the level of cooked you want it to be) and there ya go. And, bonus, while it’s doing its thing in the marinade, you can be getting the other aspects of the meal ready to go.
As a final plug for this recipe, I’ll throw out the fact that the marinade only requires four ingredients, all of which are common pantry items. So to recap: it’s easy, it’s quick. It’s healthy. And best of all, it’s DELICIOUS.
Brown Sugar-Glazed Salmon
Ingredients
- 2 6 oz. pieces salmon
- 1/3 cup brown sugar
- 1/3 cup vegetable or canola oil
- 1/3 cup soy sauce
- 1/3 cup water
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp butter
Instructions
-
Combine the brown sugar, oil, soy sauce, and water in a shallow pan. Add the salt, pepper, garlic powder, and onion powder and mix to combine.
-
Add the salmon to the pan and marinate for 15 minutes per side. (So 30 minutes total.)
-
Melt the butter in a pan over medium-high heat.
-
Add the salmon to the pan. Do not move it around after cooking it (you want it to sear.)
-
Cook for about 3 minutes, then flip (again, don't move it around after flipping), and cook for another 3 minutes.
-
Remove from heat and enjoy!
