Okay, I know I’m a little behind the times with just having discovered banana pancakes. But discover them I have, and in case you are also woefully unaware of these wonderful things, I’m here to help you out.
The thing is, I don’t really like bananas. (Probably why it took me so long to climb aboard the banana pancake train.) BUT now that I’ve discovered what AMAZING pancakes they’re capable of creating, I don’t see myself returning to the banana-less pancake version anytime soon. Strong statement, I know.
Now, you may have noticed that these bad boys are called banana-spice pancakes. And that is because we aren’t talking about any old run-of-the-mill pancakes with some mashed banana tossed in. Oh no. What we’re actually discussing is banana pancakes with… drumroll please- pumpkin pie spice! Perfect addition for fall, no? (And no, it does not make the pancakes taste like pumpkin, but yes, it does make them mouthwateringly good.)
Between the richer flavor provided by the banana and the warmth from the pumpkin pie spices (nutmeg, ginger, cinnamon and cloves, to be exact), these pancakes are the ultimate breakfast treat:) So what are you waiting for? Whip up a stack and enjoy!!
Banana-Spice Pancakes
Ingredients
- 1 cup flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 a banana
- 2 tbsp butter (melted)
- 1 tsp pumpkin pie spice
Instructions

In a small bowl, combine the flour, sugar, baking powder and salt. Set aside.

In another small bowl, mash the banana until it's nice and liquidy. Add the pumpkin pie spice and mix until well combined.

In a larger bowl, combine the milk, the melted butter, and the banana mixture. Stir until well combined, then add in the dry ingredients.

Mix until the wet and dry ingredients are well combined, but don't overmix. It's okay if there are a few lumps.

Heat half a tablespoon of butter (or oil, if you prefer) in a skillet over medium heat. Add approximately half a cup of batter (for one pancake) and cook until the top of the pancake is full of bubbles. Flip it over and continue cooking for another 2-3 minutes.

Remove onto plate and repeat previous step with remaining batter.
